Baked Scallops W/ Spicy Peanut Topping

Baked Scallops w/ Spicy Peanut Topping have Thai accents w/ the inclusion of peanuts to the topping. Bake til topping has slightly browned.

Start to finish:  20 min.

Serves:  4

1 tsp. olive oil

1 1/2 lbs. sea scallops

1/3 c. seasoned breadcrumbs

1/3 c. salted roasted peanuts

1/2 tsp. red pepper flakes

1/s tsp. grated fresh ginger

1/4 tsp. garlic powder

1 tbsp. butter, melted & cooled

Preheat oven to 425 deg. F.

Coat bottom of shallow 9″ round cake pan w/ olive oil.  Arrange scallops in single layer in pan.  Set aside.

In food processor, combine breadcrumbs, peanuts, red pepper flakes, ginger & garlic.  Process til resembles coarse sand.  W/ processor on, drizzle in melted butter & pulse til combined.

Use fingers to sprinkle breadcrumb mixture over scallops.  Bake til scallops cooked thru & topping is lightly browned, about 12-14 min.
