Baked Spiced Fish

The splendid thing about Indian cooking is that most of the recipes can be prepared in advance and the dishes then heated just before servings without coming to any harm.

4 tablespoons  oil

125 grams grated coconut

5cm (2 inch) piece ginger chopped

1 large onion chopped

4 cloves garlic finely chopped

2 green chillies seeded and chopped

1 teaspoon  chili powder

2 tablespoon finely chopped coriander

4 tablespoons lemon juice

salt

1 kg cod steaks

Method

Heat the oil in a pan, add the coconut, ginger, onion, garlic, chillers and chili powder and fry gently until the onion is translucent. add the coriander, lemon juice and salt to taste and simmer for 15 minutes or until the coconut is soft.

Oil the bottom of a baking dish just large enough to hold the fish. Arrange the fish streaks side by side and pour over the spice moderate.

Bake in a preheated moderate oven 160 C , gas mark 3, for 25 minutes or until tender. Serves 4
