Blackened Cajun Salmon Fillets

Cajun is a peppery, fragrant mix of spices, originally from the southern states of America, that works well on the barbecue.

PREPARATION TIME: 5 MINUTES, PLUS MARINATING COOKING TIME: 5 MINUTES SERVES 4

EASY / PREPARE AHEAD

1tbsp Cajun seasoning 1tbsp dried thyme 1tbsp dried oregano 1tsp paprika 2tbsp olive oil

4 salmon fillets, skin on

1  lemon, cut into wedges

Mix the Cajun seasoning, thyme, oregano and paprika with the olive oil and brush over the salmon fillets. Leave to marinate for 30 minutes or covered in the fridge overnight.

2 When ready to cook, barbecue for 5 minutes skin side down, until the skin is blackened and the salmon has cooked through. Squeeze over the lemon before serving.
