Brown Fish Stew
In this brown fish stew, red snapper is smothered in lime juice and fried to a luscious golden brown. Then the fish is cooked in a delicious mix of pimento berries, tomatoes and onions.

It’s time to grab those fishing poles and catch us some red snapper. Because this stew recipe calls for this scrumptious fish. You could also be boring and grab a few red snapper fillets at Your local fish market. Either way You’re really going to love the taste of this brown fish stew.
Ingredients
- 2lb red snapper fillets
- juice of 2 limes
- 2 tablespoons vegetable oil
- 2 tomatoes (chopped)
- 1 tablespoon pimento berries
- 1 garlic clove (chopped)
- 1/2 fresh red chilli (seeded and chopped)
- 2 onions (sliced)
- salt and freshly ground black pepper
Preparation
First clean the fish, then rub with the lime juice and pat dry with kitchen paper. Then heat the oil in a frying pan, until smoking. Add the fish and fry on both sides, until crisp and brown. Drain the oil from the pan, leaving enough to coat the bottom.
Next add the tomatoes, pimento berries, garlic, chilli and onions. Season with salt and pepper. Then saute until the onion is soft. Now add 12fl oz water. Bring to a boil and reduce by half, then cover and simmer for ten minutes. Serve hot with a pasta dish and enjoy.
