Catfish Fillets to Melt in Your Mouth
Try this Catfish recipe and don’t forget the potato salad, Avocado wedge, Ice House and Green Beans!
Last night I made Catfish fillets that melted in your mouth! Hungry Marines recently home from Afghanistan had a taste for Catfish, dumplings and potato salad and they got a mouthful. Try the recipe for your hungry Marine brothers and friends. Just don’t forget to have plenty of Corona, Sweet Iced Tea or Ice House on hand!
Ingredients
Buy 5 to 6 large pieces of de-boned Catfish Fillets depending on how many you’re feeding. If they’re Marines, the bigger the fillets the better.
1 ½ cup of Yellow Cornmeal
¼ cup of flour (all purpose will do)
2 Large eggs
½ cup of Buttermilk
Peanut or Corn oil for frying
½ Tsp Garlic powder, Cayenne and Black Pepper
Sazón Goya (Season to your liking)
Let’s Cook!
1.Wash catfish fillets and pat dry.
2. Beat your eggs and buttermilk in a mid size bowl
3. Combine garlic, cayenne, black pepper, Sazón goya, flour and corn meal on a plate or in a brown, sturdy bag and mix all ingredients well
4.Heat your oil up on medium-low. It’ll be hot by the time you finish with step
5. Dip fillets in the egg/buttermilk mix, then roll them in the cornmeal mix and coat those fillets well on both sides.
6. Your oil should be very hot by now. Put your fish in frying pan carefully and fry until golden brown on both sides.
7. Drain fillets on paper towels and make sure you serve them hot.
I served my fillets with potato salad, avocado slices, green beans and dumplings…and of course an Ice House. Hungry, war-tired Marines love a cold beer before, during and after a good meal. Enjoy!
