Chick-pea Kicker Salad
A quick loose high-protein salad side dish.
Ingredients:
Assemble the Following:
(1) One 540mL (approx. 19-oz.) can drained/rinsed Chick Peas
(1) One Red Bell Pepper, diced
(1) One firm Avocado, diced
(1) One Apple (Green ‘Granny Smith’, etc.) large cubed chunks
(2) Two hard-boiled eggs coarsely crumbled or cubed.
Green onion tops, snipped ¼ inch
(2) Two Tbsp Mayonnaise, or Sour Cream

Method:
In a medium blending bowl, add drained/rinsed chick peas, diced red pepper, avocado, apple slices, onion tops and mayonnaise (or sour cream, if you prefer.) Blend until evenly mixed.
Add cubed or crumbled hard-boiled egg. Fold coarsely once or twice. Garnish top with a shake of chili powder and green sprig of whole parsley or cilantro leaf.
This is an easy to make side-dish that goes well with seasonal fare such as butternut squash and potato soup.

I have to try this. We eat humus every day here in Israel but I haven’t seen this combo before.

Well that’s one for the recipe scrapbook. My partner loves chick peas, avacado, onions, apples, mayo, sour cream AND is also partial to a bit of spice in his life!! Strangely enough he’s had an avacado on our kitchen windowsill ripening for a couple of days so now he’ll know exactly what to do.
