Chipotle Lime Shrimp Wrapped in Bacon Recipe

INGREDIENTS
12 large raw shrimp, shelled and deveined
2 c. tablespoon olive oil
Zest of 1 lemon
Juice of one lemon (2 tablespoons)
1 / 4 teaspoon chipotle powder (or more to taste)
6 slices bacon, cut in half (12 pieces)
Skewers (for grilling) or toothpicks (for oven)

METHOD
1 in a small bowl mix the lemon zest, lemon juice, olive oil and chipotle chile powder. Place the shrimp in chipotle lime mixture,ensuring that each piece is well coated.
2 Divide the bacon bits on top of several layers of paper towels ina microwave dish. Cover with another layer of paper towels.Microwave on high until fat begins to melt bacon, but bacon is still soft, about 1 1 / 2 minutes.
3 Prepare the grill to high heat, direct (if grilling) or preheat the oven to 450 ° F.
4 Working one at a time, place a piece of bacon in the microwave half around each piece of shrimp. If you are grilling, thread the shrimp with long flat skewers (shrimp skewers rotate the plane of the grid easier). If you do not have skewers dish, I used two thin bamboo skewers (soaked in water for 30 minutes before) with the same purpose. If using the oven, ensuring each shrimp bacon with toothpicks. Place the shrimp and bacon in a fraction of a baking sheet (lined with aluminum interior for easy cleaning). Brush remaining mixture of lime out of shrimp and bacon chipotle.
