CoD Au Gratin

A delicious meal of codfish with breadcrumbs and cheese.

Cod au Gratin was not always the cheesy dish that we know today but was once garnished with bread crumbs alone. That all changed one evening in St. John’s NL, when a hotel ran out of bread crumbs and decided to use cheese as a substitute. Forever after, all their customers wanted cheese with the breadcrumbs, and so the dish that we love so much today was born.


 

Preparation Time: 15 – 20 minutes

Cooking Time: 15 – 30 minutes

4 servings

Ingredients:


1 pound cod fillets cut into cubes

1/4 cup butter

1/4 cup all purpose flour

1

1/4 cups of milk

1 teaspoon salt

pepper to taste

1 small onion, finely chopped (optional)

1/2 cup breadcrumbs or cracker crumbs

1/2 cup cheddar cheese, grated


 

Cooking directions:

1:

Preheat oven to 375°. Place Cod in

greased baking dish.

2:

In heavy saucepan, melt butter; stir in flour

until smooth and remove from heat.

3:

Gradually stir in (1/2) the milk; return to

heat and beat until smooth and shiny.

Gradually add remaining milk, salt,pepper and onion.


Cook, stirring, until smooth and thickened.



4:

Pour sauce over fish and sprinkle with

breadcrumbs and cheese.


5:

Back in 375° oven for 15- 30 minutes

until sauce bubbles and sauce is cooked.

    Thanks Judy. I’ve requested a fix for the layout and also at the end it should read ‘until FISH is cooked, not SAUCE. So far I’ve had no response.
