Deep Fried Fish Recipe

Ingredients
- vegetable oil (for deep frying)
- 11oz plain flour
- 3 teaspoons salt
- 2 teaspoons baking powder
- 2lb cod fillets (or favorite fish)
- 2 eggs
- 9fl oz milk
- 2 tablespoons olive oil
Preparation
Start by preheating the oil to 350°F, in a deep fryer or a wok. Next in a bowl, mix the flour, salt and baking powder. Then dredge the cod fillets in the flour mixture, shaking off any excess and reserve the remaining mixture for later.
Lightly beat the eggs with the milk and olive oil. Then mix in the reserved flour mixture and beat until it is smooth. Then dip the cod fillets into the batter, and deep fry until crunchy and golden brown. Drain any excess oil on kitchen paper, and serve straight away with a side of fresh vegetables or french fries.
