Duck Casserole
Lets go hunting and catch some ducks. To make this scrumptious duck casserole of course. It would be fun, but if You don’t have the time, You can always go to Your local butcher and pick one up.

If You have the option of hunting, I would go catch a fresh duck. It always tastes better when its fresh. Most us, wont have that option, so a store bought one will just have to do. This duck casserole is really delicious, the rich taste of duck meat coated in a seasoned flour and baked with mushrooms, peas and shallots is marvelous.
Ingredients
- 1oz plain flour
- 1 duck (jointed and skinned)
- 4 shallots (finely chopped)
- 4oz mushrooms (finely chopped)
- 14fl oz beef stock
- 8oz shelled green peas
- 1 teaspoon fresh mint (chopped)
- salt and freshly ground black pepper
Preparation
First preheat the oven to 375°F. Then season the flour with salt and pepper, and use to coat the duck. Put the shallots and mushrooms with the duck in a casserole dish. Add enough beef stock to cover, put on a lid and cook in the oven for 45 minutes. Then add the peas and mint and continue cooking for a further 30 minutes, until the duck is tender and serve.
