Four Easy Dinner Recipes

Most people do not have the time anymore to make a home-cooked meal. These are four quick and easy recipes to try that are also healthy.

Tuna Casserole

Ingredients:

  •  1 small package of cream cheese
  • 2 cups Macaroni ½ tsp garlic
  • 1 can Campbell’s cream of celery soup ¼ cup dry milk
  • 1 can Tuna 1 small onion, chopped
  • ¼ cup grape nuts
  • 2 tbsp butter/margarine

Method

Cook Macaroni per package directions. In casserole dish mix cream of celery, softened cream cheese, milk until smooth. Add Tuna, garlic, dry mustard and onion. Stir in cooked Macaroni. Melt Margarine and mix grape nuts into Margarine. Spread mixture over top of casserole.

Bake in 375 degree oven for 45 minutes.

Baked Pesto Chicken Angel Hair Pasta w/ Herbs French Bread

Ingredients

  • Baked Pesto Chicken Preparation: Pre- heat oven to 400 degrees.
  • 4 boneless skinless chicken breasts Cover cookie sheet with foil. Put Pesto and chicken in bowl
  • ½ c basil pesto Toss until chicken is covered. Bake for 20-25 min. Place
  • 2 plum tomatoes slices of tomatoes on top of chicken and sprinkle w/ cheese.
  • Shredded mozzarella cheese Bake another 3-5 min.
  • Serve with box of angle hair pasta, herbs and French bread

Chili Coke Roast w/ mashed potatoes and garlic green beans

Ingredients:

  •  Chili Coke Roast
  • 1 roast
  • 1 can Coca- Cola
  • 1 pkg. onion soup mix
  • 1 bottle chili sauce (best if used w/ BBQ sauce)

Method

  • Place all ingredients in crock-pot and cook for 7-10 hours depending on size of roast.
  • The meat will flake apart when done. Serve w/ mashed potatoes.

Garlic Green Beans

Ingredients

  • 2 cans regular green beans drained
  • Garlic powder
  • 2 tbsp butter

Method

Heat green beans in sauce pan with 1 tsp. garlic powder and 2 tbsp of butter

Bacon and cheese quiche w/ home fried potatoes

Ingredients

  • Bacon and cheese quiche
  • 1 9in Pillsbury pie crust 4 eggs
  • 1 T. butter 2 C. heavy cream
  • 12 bacon slices crumbles ¾ t. salt
  • 1 bag mixed cheese

Method

Pre-heat over to 425 degrees. Spread pie into pie or quiche plate. Spread crust w/ butter. Sprinkle bacon and cheese on crust. Beat eggs w/ rest of ingredients. Pour into crust. Bake for 15 min.

Turn down to 325 degrees and bake for another 40 min. Let stand for 10 min.

Home Fried Potatoes

  • 4 red potatoes 1 tsp salt
  • 1 tbsp olive oil ¾ tsp paprika
  • 1 onion chopped 1tsp ground black pepper
  • ¼ cup fresh chopped parsley

Method

Boil a large pot of salt water. Add potatoes and cook until tender but still firm, about 15 min. Drain,

Cool cut into half inch cubes. In large skillet heat 1 tbsp over medium high heat. Add onion and green pepper. Cook stirring often until soft; about 5 min. Transfer to plate and set aside. Pour remaining 2

Tbsp. into skillet and turn heat to medium-high. Add potatoes cubes, salt, paprika and black pepper. Cook, stirring occasionally until potatoes are browned; about 10 min. Stir in onions, green peppers and parsley and cook for another minute. Serve hot.
