Four Fast Tuna Recipes
Tuna is one of the most enjoyable fish and one that most people like. These recipes all involve tuna and they are easy to cook.
Here are four recipes using canned tuna that are really, really fast and very, very tasty.
Potato and Tuna Tortilla
Ingredients
- 2 tbsp olive oil
- 6 oz new potatoes sliced
- I onion, sliced
- ½ red pepper, sliced
- 1 can tuna, drained
- 4 medium eggs, beaten
- Salt and pepper to taste
Directions
- Heat 2 tbsp olive oil in a small frying pan and fry the potatoes, onion and red pepper for 8 to 10 minutes, until tender.
- Mix in the tuna, salt and pepper, then add in the beaten eggs over the top.
- Cook over a gentle heat for about 8 minutes until the base is set.
- Then up until the broiler of the oven for 2 to 3 minutes to cook the top.
- Cut into wedges and serve with a salad.
Tuna Sloppy Joes
Ingredients
- 1 tsp olive oil
- 1 onion, chopped
- 1 yellow pepper, diced
- 1 green pepper, diced
- I garlic clove, crushed
- ½ tsp chili powder
- 1 8oz can chopped tomatoes, drained leaving only a small amount of the juice
- 1 can tuna, drained
- 8 taco shells
Directions
- Fry the onion in a tsp of olive oil for 3 minutes.
- Add the diced pepper and cook for another 3 minutes, then mix in the garlic and chili powder and cook for 30 seconds.
- Add the chopped tomatoes and tuna simmer for 3 minutes.
- serve in warmed taco shells with shredded lettuce, grated cheese and sour cream.
Tuna and Olive Pasta
Ingredients
- 12 oz egg pasta (like campanelle)
- 1 tbsp olive oil
- 2 garlic cloves, crushes
- 1 red chili, deseeded and chopped
- 1 16 oz can or jar of tomato/pasta sauce
- 1 can of tuna, drained
- 4 oz chopped olives
Directions
- Cook the pasta in salted boiling water for 10 to 12 minutes until tender.
- Meanwhile, in a saucepan, gentry fry the crushed garlic and chili in 1 tbsp olive oil for 30 to 60 seconds until golden.
- Pour in the pasta sauce, tuna and olive and heat for 2 to 3 minutes.
- Spoon over the drained pasta and serve with garlic bread.
Sesame Tuna Patties
Ingredients
- 1 tbsp oil (like sunflower)
- 1 can of tuna, drained
- 2 spring or green onions, chopped
- 4 tbsp mayonnaise (regular or light)
- 1 tbsp chili sauce
- 4 oz breadcrumbs (fresh if possible)
- 1 oz sesame seeds
Directions
- Mix the tuna with the spring onions, mayo, chili sauce, breadcrumbs and salt and pepper to taste. Shape into 6 patties then coat with the sesame seeds.
- Heat 1 tbsp of oil in a frying pan and fry for 3 minutes on each side until golden brown, crisp and heated through.
- Serve with chips, lime wedges and more chili sauce.
