Fresh Salmon with Garlic and Coriander
This is for someone who loves salmon.
2 teaspoons olive oil

1 pound salmon fillets. skin removed
2 cloves garlic, finely minced
1 tablespoon minced fresh coriander
splash of hot pepper sauce
juice and pulp of lime
juice and pulp of lemon
minced scallions and tomato slices, garnish
Method: Heat a nonstick skillet over medium-high heat, then add oil. When oil is warm, add fillets and saute’ for 4 or 5 minutes on each side, until just about cooked through. Handle salmon gently to keep pieces whole. Add garlic, coriander, hot pepper sauce, lime and lemon to the skillet and cook for about 1 minute. Do not allow coriander to turn brown. Remove fillets from skillet and refrigerate, covered, until chilled. To serve, place on a serving platter, sprinkle with scallions and add tomato slices. 4 servings

Garlic and Coriander with Fresh Salmon. Wow! Scrumptious and I love olive oil so you’ve got Omega-3 and hydroxytyrosols together to boot! Unfortunately, I don’t live anywhere near fresh salmon so I order it online (http://www.order-salmon.com/ ) and the good news is that it is delivered right to my door. Thanks to you, now I have a really cool recipe I can try out.

One question that I have is, how much and how often should we eat salmon? Here is what I have found to be a pretty good summary of recommendations by experts on that question at http://www.order-salmon.com/how-much-salmon-per-person-salmon-ounces-per-week.php Do you happen to have any newer information on this? If I eat salmon, does this mean I don’t have to take fish oil capsules?
