Garlic Citrus Tilapia

I’ve been doing a lot of cooking lately while I search for another full-time position. Here’s a recipe that can be used for just about any white fish.

Garlic Citrus Tilapia

4 filets of tilapia

3 large cloves garlic, minced

1-2 tsp paprika

3 tbsp butter (or olive oil)

2 tbsp lemon or lime juice (we prefer lime)

1 tsp dried parsley

salt and pepper to season filets

Preheat oven 400 degrees. Rinse and dry filets, salt, pepper and paprika each. Set aside.  

In glass 13″x9″ pan, combine other ingredients. Lay filets on top of butter mixture.  If you wish, you can sprinkle bread crumbs on each fillet, but I like to serve this over couscous so sauce is more important than crunch.  Bake for 10 minutes.  Garnish with a lime or lemon wedge and some fresh parsley if desired.
