How to Cook Chicken Adobo
Here’s an old recipe from my family to guide you in making this delicious Filipino dish.
Adobo is a very popular Filipino dish. No matter where Filipinos go, the adobo is one of the favorite dishes they take with them to remind them of home.
It is very easy to cook adobo. There are no exotic ingredients needed, and any leftover chicken or pork will do. Some fish and seafood like squid can also be cooked instead of pork or chicken.
Here’s a family recipe in making delicious adobo.

Ingredients:
- Chicken, 1 kilo
- Garlic; crushed, 6 cloves
- Onion, medium-sized
- Bay leaves
- Crushed black pepper, 1 tbsp.
- Vinegar, 1/2 cup
- Soy sauce, 1/2 cup
- Salt, 1 tsp.
- Sugar, 1 tbsp.
- Cooking oil, 2 tbsp.
Procedure:
- Boil the chicken in plain water for around 5 minutes.
- Drain and let cool for a while.
- Mix in garlic, bay leaves, pepper, vinegar, soy sauce, salt and sugar. Marinate.
- In a large pan, saute some garlic and onions in hot oil.
- Add the marinated chicken, including the sauce.
- Bring to a boil.
- Cover and lower the heat for 30 minutes or until meat is tender.
- Add salt and pepper to taste.
Potatoes may also be added.
Yes, it is this easy to cook! Serve hot with steamed or fried rice.
