Main Meal Fish Soup

Try this easy, versatile and very fast to prepare nutritious meal.

Scrumptious, fast and easy to make no fuss or bother meal that can be prepared ready to enjoy in 20 minutes. Increase portions and make some extra for tomorrow’s lunches.
Ingredients
- 2 x 500 Gram Cans of Chunky Potato and Bacon Soup
- 300 Grams (10½ Ounces) Skinned Smoked Cod
- 1 Leek
- 1 Garlic Clove
- ½ Cup of Freshly Chopped Parsley
- ½ Cup of Water
- 1 Tablespoon of Olive Oil
- Freshly Ground Sea Salt (to season and serve)
- Freshly Ground Black Pepper (to season and serve)
- Sour Cream (to serve – optional)

Method
- Wash, drain, trim and finely chop parsley
- Rinse, trim and chop 1 leek
- Peel, trim and crush garlic (a garlic press works best for doing this)
- Skin smoked cod if necessary. Chop smoked cod into thumb nail size pieces
- Heat olive oil in a large saucepan over a low heat
- Add the leek and cook until soft (about 5 minutes)
- Add garlic and cook for 1 minute while continually gently stirring
- Stir in both cans of chunky potato and bacon soup and the water
- Continue stirring as you increase the heat a bit bringing the base soup mixture up to a boil
- Reduce heat to low and simmer for 5 minutes
- Add cod to soup mix, cover saucepan and continue simmering for another 3 to 5 minutes
- Reduce heat to very low to keep soup piping hot until served
- 2 minutes prior to serving add in and stir through the parsley

Serving a Main Meal Fish Soup:
- This main meal fish soup is great served piping hot along with crusty bread, croutons and toast (for the compulsive dunker in all of us).
- Another great way to have this soup is to add a tablespoon dollop of sour cream onto the center of the soup a very gently stir to create a spiral effect.
- Another great idea for busy people on the go is to prepare this fish soup dish tonight using full or extra quantities of above cited ingredients.
- Soup can be stored frozen but we never have enough left over to do so regularly as any extra soup is taken hot to work or school in flask. If you have access to a microwave a quick nuke, let it stand for 2 minutes and then dig in and enjoy!
