Man Can Cook, You Bet!

"Man can cook!" oh yes, you too must have heard it before. But have you heard that 40% of the total food network viewers, you guess it right now, comes from the male audience. Very interesting, to say the least! Wives or female partners are now jumping with joy that the men in their lives can actually take command of the kitchen.

I got tired of doing the cooking one night, and Glenn popped the magic question, “Is there something i can do for you?” And my immediate reply was “Can you cook?” To which Glenn replied, “I may not be a “culinary-gifted” person but I did some cooking too in the past, being a working student and a single guy for some time”. He warned me though that he will never be the next “Iron Chef”, he just cooks what he knows and is not good at making better-than-restaurant dishes. That night, he didn’t make me do anything; he impressed me with his simply fabulous and super-easy grilled salmon dish with butternut squash as a side dish. I rated it A+ and I begged for him to write down the recipe (recipe follows). Remember Girlfriends…it’s high time for guys at home to cook too and not just do the dishes. Equal opportunity is the sign of the times, period.

Glenn’s Signature Fast and Easy Grilled Salmon

Grilling salmon over a high heat seals and retains the fish own natural juice and gives the exterior of the cooked fish a slightly blackened, crispy, caramelized look.

2 (6 oz package) skinless salmon fillet, washed and patted dry with a paper towel

1 fresh lime, halved

2 tablespoons softened butter

salt and pepper to taste

Heat indoor grill pan brushed with oil. Grill one side of salmon for about 3 to 4 minutes, flip over. Squeeze half of lime directly on the fish, distributing lime juice evenly. Smear softened butter over the fish and continue cooking for another 3 to 4 minutes or until the fish flakes easily with a fork Season with salt and pepper and transfer to serving dish. Garnish with wedges of remaining half of fresh lime.

Baked Butternut Squash

Glenn prefers baking the squash in the oven than following the microwave instructions appearing on the label stamped on the butternut squash.

1 large butternut squash

2 tablespoons butter

1 tablespoon brown sugar or maple syrup

Preheat oven to 350 F. Halve squash lengthwise and remove seeds. Place cut side down on a 9 x 13 baking pan with filled with about 1/2 inch water. Bake for about 45 minutes or till squash is tender. Brush inside of squash halves with butter. Sprinkle brown sugar or drizzle maple syrup over cooked squash halves.

Salmon and butternut squash, so simple, so delicious, a winning combination indeed! Try eating grilled salmon with store-bought mango and peach salsa for an interesting twist, you won’t regret it.
