Mardi Gras Recipes: Cajun Seafood Bites

Here is another delicious recipe you can use at home for Mardi Gras. Actually, my mom makes these whenever she feels like eating them, but especially makes them for Mardi Gras.

1/2 pound cooked, cleaned and peeled shrimp

1 (6 ounce can) crabmeat

1 (6 oz) can salmon

1 (7 oz) can whole corn kernels, drained

1 cup cooked white rice

1 Tablespoon Cajun Spice Mix

1/2 cup prepared tartar sauce, plus more for serving

1 Tablespoon whole grain mustard

2 Tablespoons dried parsely flakes

salt and freshly grund pepper

2 eggs, beaten divided

1/4 cup dried bread crumbs

Peanut oil for frying

Lemon wedges for serving

Preheat your deep fat fryer to 350F. Pulse the shrimp in a food processor until finely chopped.  Add all the remaining ingredients except one of the beaten eggs and the bread crumbs. Fold together gently, but thoroughly using your fingers, Roll the mixture into 1 1/2 inch balls. Dip into the beaten egg. THen dredge in the bread crumbs. Deep fry the bites in the oil iuntil golden brown. Drain on paper towels on a baking sheet. Serve with lemon wedges and more tartar sauce for dipping
