Perfect Organic Salmon Fillets

I will show you how to fry the perfect salmon fillets with very basic ingredients.

Get yourself some organic salmon form the fishmongers. Do not hesitate to ask the fishmonger to take the bones out. They will be happy to do it.

1. Place the fillets on a plate. Toss a pinch of salt, pepper and a tablespoon of lemon juice on each. Add a teaspoon of olive oil on the fillets. Toss them around on the plate and make sure they are covered with the spices and olive oil. Pat them gently with your hand.

2. Preheat a larger pan with a minimum amount of olive oil. Salmon has a lot of natural fats, so you do not need a lot of oil to cook it.

3. Once the pan is hot, place the fillets SKIN DOWN on the pan on medium heat.  Take a look how the salmon will change color. Once it is darker about 1/3 of the way, turn it around and cook on the other side. Do not overcook. It should take about 2-3 minutes on each side, depending on the thickness. Just watch the color and trust your eyes. The salmon should be gently pink on the inside when done. 

4. Put the fillets on a plate and garnish with fresh greens and lemon juice.
