Poached Mackerel

Now its a great way to cook fish. Make tasty Poached Mackerel and have a nice dinner.

Ingredients

  • 8 mackerels
  • 3/4 cup of vinegar
  • 3/4 cup of water
  • 1 bay leaf
  • 2 small onions sliced
  • 6 peppercorns
  • 5 cloves
  • 2 flakes of garlic
  • 1 teaspoon of salt
  • 1 tablespoon of parsley chopped

Method

  1. Remove heads, clean and wash fish.
  2. Put vinegar, water and bay leaf in cooker. Place fish alternately head to tail in cooker.
  3. Cover fish with onions, peppercorns, cloves, garlic and salt.
  4. Close cooker. Bring to full pressure on high heat. Reduce heat and cook for 3 minutes.
  5. Remove cooker from heat. Release pressure with slight lifting of vent weight.
  6. Open cooker. Place fish on serving dish. Keep hot.
  7. Return cooker to high heat and boil till liquid is reduced to half. Strain and pour over fish.
  8. Serve hot, garnished with parsley.
