Quick and Easy Egg Fried Rice

30 minute cooking that makes one great tasting meal.
Ingredients
- 1/2 Cup of pre-cooked rice (Best left in a fridge overnight)
- 1 Egg – Scrambled
- 1/2 Medium-Large Onion
- 1/2 Pepper (Green/Red peppers add a bit more colour than Yellow ones)
- Handful of Meat (For me Lardons or Chicken tastes the best)
- 25/50ml Soy Sauce
- 10ml Fish Sauce
- 1 Stock cube (Chicken/Veg works best for me)
- Boiled Water (If Necessary)
Optional Extras
- Mushrooms- thinly sliced
- Carrots- thinly sliced
- Bean Sprouts
- Pak Choi- Diced into large cubes
- Peas- From Frozen
- Sweetcorn- Tinned or From Frozen
- Baby Sweetcorn- Cut into Thin Strips
- Ginger
- Garlic
- Spring Onions
Method
- First off scramble your egg in a frying pan, add anything you want to it (salt/pepper etc.) leave the egg in a bowl afterwards. Cut the meat into small strips and fry in the pan, again when cooked, leave in a small bowl with the egg. Now dice the onion. The best way to do this is leave the root on the onion and cut from root to tip in thin slices, then do the same at 90 degrees to your first set of cuts. The onion should easily break into small pieces. Now core the pepper, cut into thin strips and again so they make small squares. Add the soy and fish sauce into a cup and dissolve the stock cube in. The best way to do this is cut the stock cube in half with a sharp metal knife and apply pressure onto each half so they break up into a fine powder.
- First off fry your onions in the frying pan with a splash of Olive Oil. when starting to brown add the pre-cooked rice and fry for a minute or two. Then add all your prepared ingredients (Pepper etc.) and fry off a little longer, Now add your stock mixture to the pan (I find that the most flavour comes when you leave a little at the bottom of the pan) Then leave to boil for a couple of minutes so the rice can absorb all the flavours. Afterwards, simply add to a bowl and enjoy!
