Red Snapper Casserole

This delicious red snapper casserole has the perfect blend of rich flavors. It’s a simple fish casserole recipe that is really easy make and should only take about 45 minutes to prepare and cook. You will really enjoy the lovely taste of this red snapper casserole and the ease of making such a delicious dish.

Ingredients

  • 1 1/2lb red snapper fillets
  • plain flour (for dredging)
  • 2oz butter
  • 6oz green chilli sauce
  • 12oz Cheddar cheese (grated)
  • 2 tablespoons fresh flat leaf parsley (chopped)
  • salt and freshly ground black pepper

Preparation

Start by preheating the oven to 350°F and seasoning a little flour with salt and pepper. Then dredge the snapper fillets in the seasoned flour. Heat the butter in a frying pan, and lightly saute the fillets on both sides, in batches if necessary.

Next transfer the fillets to a large casserole dish. Divide the chilli sauce and cheese among them. Bake for about 12 minutes. Sprinkle with the parsley, and serve immediately.
