Red Thai Salmon Curry Serves Four
An easy to make red thai salmon curry for four.
This curry takes around 20 mintues to cook and prepare.
300g Thai Jasmine rice
4 salmon fillets
200g trimmed green beans
10g fresh coriander
35g thai red curry paste
500ml chicken stock
400ml coconut milk
1. Place the coconut milk, chicken stock and curry paste in a casserole dish with a lid and bring to the boil, stirring with a wooden spoon until the curry paste dissolves.
2. Add the rice and green beans and simmer gently for around five minutes.
3. Put the salmon fillets on top of the rice. Season with salt and pepper then cook for further 6-8 minutes until rice is quite tender and fish is cooked properly.
This is very easy and very tasty.
