Salmon Two Ways
This is a tasty Salmon recipe.
- 2 portions, 3oz salmon
- Herbs de Provence
- Pesto
- Teriyaki sauce
- Citrus risotto, 1 cup orange juice.
- White wine sauce
- Grilled Asparagus
- Season salmon with salt and pepper, add pesto and herb and breadcrumb mixture to one portion and teriyaki sauce to the other.
- Saute shallots and garlic add orange juice reduce, add risotto rice gradually add stock until absorbed for twenty to twenty-five minutes.
- Sweat shallots and garlic, add white wine reduce then add heavy cream and reduce again by two thirds, remove from heat and add fine chopped parsley.
- Grill aspargus add to pan with cherry tomato season with salt and pepper add butter saute quickly.
- Plate rice in two portions, place salmon on each portion, place vegetable on plate and then sauce.
