Salmon Two Ways

This is a tasty Salmon recipe.

  • 2 portions, 3oz salmon
  • Herbs de Provence
  • Pesto
  • Teriyaki sauce
  • Citrus risotto, 1 cup orange juice.
  • White wine sauce
  • Grilled Asparagus
  1. Season salmon with salt and pepper, add pesto and herb and breadcrumb mixture to one portion and teriyaki sauce to the other.
  2. Saute shallots and garlic add orange juice reduce, add risotto rice gradually add stock until absorbed for twenty to twenty-five minutes.
  3. Sweat shallots and garlic, add white wine reduce then add heavy cream and reduce again by two thirds, remove from heat and add fine chopped parsley.
  4. Grill aspargus add to pan with cherry tomato season with salt and pepper add butter saute quickly.
  5. Plate rice in two portions, place salmon on each portion, place vegetable on plate and then sauce.
