Sardine Delights

Sardine delights are a wonderfully tasty simple meal or quick snack that can be whipped up at a moment’s notice and still give that aura of a professional gourmet whilst not costing an arm and a leg.

These sardine delights are a wonderfully tasty simple meal or quick snack that can be whipped up at a moment’s notice and still give that aura of a professional gourmet. Just take care not to burn the bread as you are toasting.

Ingredients

  • 1 Can of Sardines in Tomato Sauce
  • ½ Cup of Grated Colby Cheese
  • 1 Medium Tomato
  • 1 Medium Onion
  • 1 Clove of Garlic
  • 1 Shallot
  • 1 Pinch each of Dried Dill Tips and Dried Onion Flakes
  • Freshly Ground Black Pepper
  • Table Butter
  • Sliced Bread

Method

  1. Roughly dice the shallot and peel and slice the onion into rings
  2. Preheat toasted sandwich maker (I use one of George Foreman’s grills for this)
  3. Use a small mixing bowl and empty the sardines and all of the juices into it. Add the grated Colby. Then add a pinch or two of dried dill tips and the onion flakes. Use a garlic press to mince the garlic and add that into the mixing bowl. Finally dice the tomato and add that to the mix.
  4. Using a fork mash all ingredients together into a paste
  5. Now lightly butter four slices of bread and then spread the sardine and cheese paste onto two of the slices. Grind some black pepper over the sardine paste. Top this with some onion rings and a sprinkle of the diced shallots.
  6. Put the other two slices of buttered bread on top of the filling buttered side down. Then lightly butter the top of the top slice of bread.
  7. Put filled sandwiches onto toaster or grill buttered side down (this means that you flip them) then quickly butter the tops and close the grill/sandwich maker. Cook until bread is toasted nice and crispy golden brown and you can see some of the melted filling just beginning to ooze out from between the slice of bread.
  8. While these two are cooking get the next two ready
  9. Transfer toasted sardine delights to serving plate and diagonally cut into four triangle wedges. Begin to consume immediately. Any unused paste can be refrigerated for later use. Enjoy!
