Sardines and Greens with Ginger Vinaigrette

My husband favorite dish.

1 cup shredded kale

1 cup shredded bok choy leaves

1/2 cup water chestnuts, sliced into thin coins

2 cans (3 3/4 ounces each) water-packed, no-salt-added sardines

1 tablespoon apple cider vinegar

1 1/2 teaspoons olive oil

1 teaspoon finely minced ginger

1/2 teaspoon grated lemon peel

fresh-ground pepper

Method: In a large bowl, combine kale, bok choy, water chestnuts and sardines. In a small bowl, combine vinegar, olive oil, ginger, lemon peel and pepper. Pour over salad and toss thoroughly but gently, so sardines don’t crunble. 4 servings

    What else could I use this dressing on, I don’t like sardines but I really want to try it.

    I really don’t like sardines, I wonder if you can try this with another type of fish :)

    I love the dressing but not the sardines. chicken would go well but I’m vegetarian, I would just sprinkle it with cheese and chopped egg.
