Sardines and Greens with Ginger Vinaigrette
My husband favorite dish.
1 cup shredded kale
1 cup shredded bok choy leaves
1/2 cup water chestnuts, sliced into thin coins
2 cans (3 3/4 ounces each) water-packed, no-salt-added sardines
1 tablespoon apple cider vinegar
1 1/2 teaspoons olive oil
1 teaspoon finely minced ginger
1/2 teaspoon grated lemon peel
fresh-ground pepper
Method: In a large bowl, combine kale, bok choy, water chestnuts and sardines. In a small bowl, combine vinegar, olive oil, ginger, lemon peel and pepper. Pour over salad and toss thoroughly but gently, so sardines don’t crunble. 4 servings

Thanks for broadening my horizons. I am going to make this. I’ve never had sardines before or ginger that wasn’t in a cookie. I want to broaden my food horizons, thanks again!

I’ll have to pass on the sardines. I may have to stick to microwave cooking.

I love the dressing but not the sardines. chicken would go well but I’m vegetarian, I would just sprinkle it with cheese and chopped egg.
