Saura’s Shrimp Salad

A great summer shrimp salad, for your picnic or BBQ.

                                          Saura’s Shrimp Salad

        Ingredients:

1 Bag uncooked large shrimp                                  

1 Large green pepper thinly sliced                        

1 Large red pepper thinly sliced                           

1 Large onion thinly sliced                                      

1 pk Goya Sazon, coriander and annato                        

1/3 cup Lemon juice  

1/2 cup Sliced green olives

1/2 cup Olive oil

2 cups Flour

4 tbsp Parsley flakes

1 tbsp Salt (optional)

3 tbsp Oregano

Vegetable oil as needed               

      Preparation:

     Peel shrimp and divine shrimp if necessary (Tip: by the bag already done). In large bowl add shrimp, lemon juice, oregano and salt, mix well. Allow the shrimp to marinade for up to 1 hour in the fridge. In a salad bowl place sliced green pepper, sliced red pepper, sliced olives, sliced onions and olive oil. Mix and set aside allowing all the flavors to come together.

 In a frying pan, heat vegetable oil on medium heat. In a bowl combine flour, parsley flakes, sazon and salt. Place a few shrimp at a time in the flour mixture, coat well. Place each shrimp in heated oil and fry till nicely browned. (Tip: Best to use a large frying as excess flour will fall off causing the oil to burn and give the shrimp a bad taste. If using a small pan change oil as needed). Strain all cooked shrimp of excess oil.  Toss cooked shrimp in the olive oil mixture and serve.    Enjoy!!!
