Seafood Stew Recipe

This is really healthy and delicious recipe called "Seafood Stew Recipe".

Ingredients:

2 tablespoons olive oil

1 and 1/2 cups chopped oonions

1 tablespoon minced garlic

1 can (28 ounces) plum tomatoes with basil

2 and 1/2 cups water

1 cup reduced-sodium vegetable juice

1/4 cup no-salt-added tomato paste

1 teaspoon dried oregano

8 ounces blue crab-meat

9 ounces medium shrimp,peeled and deveined

8 ounces chopped clams with juice

1 tablespoon chopped parsley

Procedure:

1. In an oven, heat the oil over medium heat. Add the onions and garlic. Cook, stirring frequently, until the onions soften, about 5 minutes. Add the tomatoes with juice, breaking up the tomatoes with the back of a spoon.

2. Add the water, vegetable juice, tomato paste, and oregano. Stir to mix. Bring to a boil, then reduce the heat to low. Cover and cook for 30 minutes. Meanwhile, pick over the crab-meat, and discard any bits of shell. Place the crab-meat in a fine strainer. Rinse with cold water and drain.

3. Add the crab-meat, shrimp, and clams to the pot. Increase the heat to medium high. As soon as the stew returns to a boil, remove it from the heat. Set aside, covered until the shrimp are opaque in the center, about 5 minutes. Test by cutting a shrimp in half. Sprinkle with the parsley.

    This sounds like an easy recipe. I don’t usually eat seafood, but this does sound like it could be good.
