Spicy Squid Adodo
A simple but deliciously good recipe of fresh squid.
Spicy foods are good foods to eat during cold weather because it warms the body. In the Philippines, almost all kind of meat, fish and other things are cook in adobo style. Once you hear the term “adobo”, it’s referred to a Filipino dish associated with garlic, onion and soy sauce, its three primary ingredients. To make adobo more tempting and irresistible, “siling labuyo” or chili peppers are added.
Since the Philippines is surrounded by water, South China Sea on the west and the Pacific Ocean on the east, bountiful catch of all kind of fishes and other marine edible species plunge the market everyday. One of which is squid, one of my favorites. Here’s a recipe of fresh squid that you’ll probably enjoy not only during the cold months but all-year round.

Steps on How to Make Squid Look Clean and Yummy
Ingredients:
- 1 kg fresh squid, cut into pieces and drained
- Cooking oil
- 1 medium-sized ginger, cut into strips
- 2 medium-sized cloves of garlic, minced
- 2 medium-sized onions, chopped
- Soy sauce
- Oyster sauce
- Vinegar
- Black pepper
- 4 laurel leaf
- 10 pieces siling labuyo or chili pepper, finely chopped (optional for those who don’t like it spicy)
Method:
- In a small amount of cooking oil, sauté ginger, garlic and onion
- Add squid and put the stove on high fire constantly mixing it
- Don’t add water, it will produce its own, let boil for minutes
- Add the laurel leaf, chili pepper and sprinkle some black pepper
- Pour soy sauce to taste, and about two tbsp of oyster sauce
- When all the liquid had evaporated it’s done
- Pour two tbsp of vinegar, dish out and serve hot
