Tuna Mornay

I love tuna mornay but after scouring recipe books I couldn’t find one where I liked all the ingredients. So I made up my own variation and ingredients I like. It’s real yummy and serves 4 people.
Ingredients
- 60grams of margarine
- 1 1/3 cup of plain flour
- 2 ½ cups of milk
- 1 chicken stock cube
- 1/3 cup of cheese
- 425grams can chucky style tuna
- 1 cup of frozen peas
- 1 cup of frozen corn
- 1 cup of frozen crinkle carrots
- 2 eggs
Preparation
- Boil eggs, carrots, corn and peas
- Drain carrots, corn and peas
- Peel eggs and slice them
- Drain tuna and flake it
- Grate cheese
- Heat margarine in large pot
- Stir in flour over heat until dry and grainy
- Remove from heat
- Gradually stir in milk and crumbled stock cube
- Return to stovetop and heat until sauce boils and thickens
- Stir in cheese, tuna, peas, corn and carrots
- Gently fold in eggs
- Pour mixture into ovenproof large dish
- Bake in moderate oven for about 25 minutes or until the tuna mornay is heated through.
