Tuna Mornay

I love tuna mornay but after scouring recipe books I couldn’t find one where I liked all the ingredients. So I made up my own variation and ingredients I like. It’s real yummy and serves 4 people.

Ingredients

  • 60grams of margarine
  • 1 1/3 cup of plain flour
  • 2 ½ cups of milk
  • 1 chicken stock cube
  • 1/3 cup of cheese
  • 425grams can chucky style tuna
  • 1 cup of frozen peas
  • 1 cup of frozen corn
  • 1 cup of frozen crinkle carrots
  • 2 eggs

Preparation

  1. Boil eggs, carrots, corn and peas
  2. Drain carrots, corn and peas
  3. Peel eggs and slice them
  4. Drain tuna and flake it
  5. Grate cheese
  6. Heat margarine in large pot
  7. Stir in flour over heat until dry and grainy
  8. Remove from heat
  9. Gradually stir in milk and crumbled stock cube
  10. Return to stovetop and heat until sauce boils and thickens
  11. Stir in cheese, tuna, peas, corn and carrots
  12. Gently fold in eggs
  13. Pour mixture into ovenproof large dish
  14. Bake in moderate oven for about 25 minutes or until the tuna mornay is heated through.
