Zarzuela (Spanish Sea Food Stew)

This excellent seafood stew comes from the Catalan coast of northeast Spain. Zarzuela means "operetta," or "variety show," and perfectly describes the sing-song versatility of this dish. The greater the variety of seafood you add to this dish, the better its flavor will be.

Ingredients:

50 g lapu lapu
50 g mussels
50 g shrimp
100 g clams
50 g squid
2 oz tomato sauce
1 tbsp. olive oil
1 clove garlic
1 tbsp.sherry wine
2 tbsp. brandy
1 tsp. salt
1 tsp. pepper
1 slice fried bread
2 green olives, chopped

Procedure:

Sauté garlic in olive oil. Sauté fish until half-cooked. Add the remaining seafood. Pour the brandy and sherry. Add tomato sauce, season with salt and pepper. Garnish with chopped green olives.
