Zucchini Crab Cakes

Just using zucchini for receipe. It taste just like crab cakes.

 

               2 1/2 cups graded zucchini

               1 egg (beaten)

               2 tablespoons melted butter

               1 cup bread crumbs

               1/4 cup minced onion (in can)

               2 tablespoons old bay seasoning

               1/4 cup flour

               1/2 cup frying oil

 

                 In a large bowl combine zucchinni egg and butter. Stir in bread crumbs, onion

         and old bay seasoning. Mix well. If needed add more bread crumbs. to tighten up mixture so

         mixture can form into patties. Dredge the patties into flour and refridge for at least 2 hours

        The longer the better. When ready to fry them dredge again in flour. Fry until golden brown.

        Enjoy. Taste just like crab cakes. With out the crab meat.
