Four Cheese Spinach Tart

This is definitely not for the weight conscious. But if you are going to stray from your diet, this is the perfect excuse.

Ingredients

  • Partially baked 9″ pie crust (homemade or store bought)
  • 1 ½ lbs washed spinach
  • 2 tbsp butter or margarine
  • 1 ½ cups sweet onion
  • 3 eggs
  • ½ cup heavy cream
  • Salt and pepper
  • 2 ½ tbsp roasted garlic (or substitute 1 tbs garlic paste)
  • 1/4 cup Parmesan cheese
  • 2-3 ounces Blue cheese crumbled
  • ½ cup Ricotta or drained cottage cheese
  • ½ cup grated Gouda

Method

  1. Cook spinach in salted water until it is tender. Strain and dry out a bit
  2. Chop and set aside
  3. Heat butter or margarine in a frying pan
  4. Saute onions just until they are limp
  5. Stir in spinach until it is fully incorporated and season with salt and pepper
  6. In a large bowl, mix together cream, eggs, garlic and ricotta (or cottage) cheese
  7. Add all of the other cheeses
  8. Stir in onion and spinach mixture
  9. Put mixture into pastry shell and bake in a 375 degree oven for 30-40 minutes or until set firm and light brown

Not: For a milder taste substitute Swiss Chard for the Spinach and use whatever types of cheese you like.
