Grandma Anna’s Noodles with Giblets

A lovely plate of pasta that you can make with what you don’t use of a chicken.

Ingredients for 4 people:

400 gr. egg noodles or tagliatelle –

500 gr.  of chicken livers and hearts -

1 onion -

3 tablespoons olive oil –

40 gr.  butter -

a sprig of sage -

rosemary -

1 / 2 bay leaf – a brandy -

broth -

½ cup cream -

salt and pepper.

Preparation:

Finely chop the onion, brown it plans in a saucepan with the butter and oil. Meanwhile, clean the liver and hearts, cutting them into pieces first. Throw in the hearts with the onion and fry for 5 minutes stirring often. Then add the chicken livers and let them also become brown. Sprinkle with brandy and let it evaporate add the herbs that you have washed and chopped, pour a glass of hot broth and cook for 5 minutes. Add salt and pepper, pour the cream on the livers two minutes before removing them from heat. Meanwhile, you put a saucepan with plenty of water for cooking pasta.As soon as it boils add salt, add the noodles or tagliatelle and cook al dente. Then place them on a serving plate, forming a kind of “nest” inside of which put the chicken livers with their sauce.
