Grilled Pizza with Sausage, Roasted Garlic, and Feta

For me, nothing says summer like grilling. Hamburgers and steaks are fine, but try something new this summer with my sausage, roasted garlic, and feta pizza. The best parts about grilling pizza is that everything goes on the grill and it is a one dish meal.

Ingredients

  • 12 inch pizza crust (you can make your own dough or buy pre-made at most bakery shops)
  • 6 whole cloves of garlic
  • 2 links of beef, pork, and/or chicken sausage
  • 1 tsp finely chopped rosemary
  • 1 tsp of finely chopped parsley
  • 1 tsp of oregano
  • ½ tsp Kosher salt
  • ½ cup of fresh mozzarella
  • ½ cup of feta cheese
  • 1 cup of washed and halved grape tomatoes
  • Flour
  • Olive oil
  • Hickory wood chips
  • Pizza stone
  • Grill

Method

  1. Cook sausage and garlic on a grill heated to 500 degrees. If the slats in your grill are set too far apart to hold the garlic, then just wrap them in foil. Use a fork to poke a few holes in the foil and grill as is. Remove and let cool.
  2. Preheat pizza stone for 45 minutes on the 500 degree grill. If your grill is large enough, you can preheat the stone while cooking the sausage and garlic.
  3. Soak the wood chips in water as the package directs. While stone is still preheating, assemble the wood chips into their smoker tray/box. Put the wood chips in the grill after the stone is preheated,.
  4. Thinly slice sausage and squeeze the garlic from their skins.
  5. Chop parsley, rosemary, and tomatoes.
  6. Sprinkle counter top with flour. Roll out pizza dough to ¼ inch thickness.
  7. Lightly brush the dough with olive oil.
  8. Evenly spread the roasted garlic across the pizza crust.
  9. Sprinkle with rosemary, parsley, salt, oregano.
  10. Place crust on pizza stone.
  11. Evenly add cheeses, sausages, and tomatoes to the dough- going light around the center of the dough.
  12. Cover and cook 5 minutes at 500 degrees.
  13. Rotate the stone and cook another five minutes.
  14. Remove stone from heat and then transfer pizza off of stone.
  15. Slice and enjoy!

    This sounds like a great idea and I want to try it so bad- guess I could use soy “sausage” for a meatless alternative …yeah, that’ll be delicious.
