How to Make an English Muffin Pizza

If you’re in the mood for a slice of pizza, but don’t feel like ordering an entire pie, here’s a quick and easy version of English muffin pizzas. The great thing about this mini pizza recipe is that you can add vegetables on as toppings and give your kids a healthy and fun meal.

Ingredients

  • 2 English muffins, each split in half
  • 4 Tbsp butter
  • 8 Tbsp pizza sauce
  • 1/2 cup ricotta cheese
  • 1/2 cup shredded mozzarella cheese
  • 1/2 green peppers, chopped fine
  • 1/2 cup red peppers, chopped fine
  • 1/2 cup onions, chopped fine
  • 16 small slices pepperoni (or turkey pepperoni)
  • 4 Tbsp parmesan cheese
  • 4 tsp garlic powder
  • 4 tsp oregano

Method

  1. Spread each English muffin half with 1 Tbsp butter. Place in an oven set at 250 and bake for 10 minutes until slightly crisp. Remove and cool.
  2. Spread each muffin slice with 2 Tbsp pizza sauce.
  3. Spread a bit of the ricotta cheese on each slice, then add the mozzarella on top.
  4. Place a portion of the peppers and onions on each slice (feel free to vary the vegetables and use mushrooms, peas, broccoli, etc.)
  5. Place four slices of the pepperoni on each muffin half. Sprinkle  each half with 1 Tbsp parmesan cheese, 1 tsp garlic powder and 1 tsp oregano.
  6. Bake for 20 minutes in an oven set to 300 or until the cheese melts.

Serves 4 (or 2 very hungry people)
