Island BBQ
A sweet BBQ sauce with a little bite that is a nice break from tomato based BBQ sauces.

With summer more than half over, many outdoor grills have gotten a real workout, and by now many people are tired of cooking the same old, same old recipes over and over. If you are looking for some new grilling ideas here is a recipe that is sure to be a people pleaser.
The original recipe came from an old African American cookbook I found in my mother’s attic years ago. Over the years I have taken out a few things, added others and tweaked the recipe until I came up with one my family loved. The original recipe was Called Spicy Island Ribs, and while the sauce is great on ribs I find it is excellent with chicken as well.
Ingredients
- 1/1/2 pound of short ribs lightly par boiled or
- 6 boneless chicken breasts tenderized with a meat hammer
- 1 can crushed pineapple
- fresh coconut meat removed from coconut and shredded fine
- 1 small onion diced
- 1Tablespoon Horseradish
- 1 Cup brown sugar
Method
- Start outdoor grill covering wire rack with aluminum foil
- In sauce pan combined canned pineapple with juice, coconut, onion, horseradish, and brown sugar, heat until sugar is dissolved and sauce is slightly warm.
- When grill is ready place chicken or ribs on grill.
- Using a brush coat meat with sauce.
- While cooking turn frequently and reapply sauce. (about every 5 or 10 minutes)
- Serving directions
- You can serve the meat straight from the grill with side salads, or serve the chicken over rice.
- If serving on a platter for a get together you can place the meat in the middle of the platter and decorate around the meat with pineapple rings and maraschino cherries for a nicer look.
Notes
- This sauce will give your meat a sweet taste with a bit of a bite to it. It is a nice alternative from tomato based BBQ sauce.
- For indoor cooking Chicken can be placed in a frying pan and the sauce poured over it and cooked on low heat until done.
- The ribs can be done in your broiler and basted as though you were cooking on a grill.
- This sauce is also good served on the side with chicken tenders, or wing dings.
- I also have a friend who claims that shrimp cooked in the sauce is very tasty.
