Leftover Turkey Quiche

Here is another great way to use up the holiday leftovers.

3 cups leftover stuffing

1 cup chopped cooked turkey meat

1 cup shredded Swiss cheese

4 eggs, beaten

1 -5 1/2 oz can evaporated milk

Salt and Pepper to taste

Press leftover stuffing into a 9 inch pie plate to form a crust.  Bake at 400 degrees for 10 minutes.  While the crust is baking, combine meat and cheese in one bowl.  In another bowl, beat eggs and evaporated milk together.  Add salt and pepper to taste.  Sprinkle meat and cheese over baked crust.  Pour egg mixture over that to form top layer.  Bake at 350 degrees for 30-35 minutes or until center is set.   Let stand 10 minutes before serving.  Serve with any leftover vegetables, sides, and/or salad.

Leftover cheese from a cheese tray may be substituted for Swiss cheese.  If there is sausage left over from a sausage tray, about a 1/4 cup of chopped or thinly sliced sausage may be add with meat and cheese mixture.
