Liver and Macaroni Casserole

This delicious casserole recipe is the perfect way to get Your family to eat that dreaded liver. They will really enjoy the taste of this casserole and I bet they wont even know there eating liver in the process.

Here is a tasty liver and macaroni casserole recipe. The rich and savory taste of liver, cooked with macaroni in a flavorful mix of onions, tomatoes and chicken stock is really good. This flavorsome casserole is pretty simple to make and should take no more then, few minutes to prepare and about an hour to cook.

Ingredients

  • 12oz pig livers (thinly sliced)
  • 1oz butter
  • 2 onions (thinly sliced)
  • 3 tablespoons plain flour
  • 5fl oz chicken stock
  • 14oz canned plum tomatoes (chopped)
  • 2 teaspoons fresh sage (chopped)
  • 4oz macaroni
  • salt and freshly ground black pepper

Preparation

First preheat the oven to 350°F. Then brown the liver in half the butter in a flameproof casserole dish for one minute on each side. Remove from the pan with a slotted spoon. Now add the remaining butter, and saute the onions for three minutes until soft and lightly golden.

Next add the flour and cook, stirring, for one minute. Blend in the chicken stock and tomatoes. Bring to a boil, stirring, for one minute. Return the liver to the pan and add the sage and a little salt and pepper. Cover and cook in the oven for one hour. Cook the pasta until al dente. Drain. Stir into the casserole and serve hot.
