Simple Mac & Cheese recipe using Gruyere cheese.

Without much extra time or effort you can make homemade mac & cheese that knocks the socks outta the stuff from the blue box.  This recipe adds a little twist by using Gruyere cheese, which can be found in the deli section of your grocery.  I usually find an 8 oz package and go ahead and make my dish extra cheesy!

Ingredients:

  • 8 oz. small elbow macaroni (approx. 2 cups)
  • 1 ½ cup Gruyere cheese – grated or shredded (approx. 6 oz.)
  • 1 cup whipping cream
  • 1 cup whole milk
  • 1/8 tsp nutmeg
  • 3 tbsp Parmesan cheese
  • Salt
  • Pepper
  • Optional: 3 oz. thinly sliced Prosciutto

Method:

  1. Position oven rack in bottom third of oven.
  2. Preheat to 400°F.
  3. Grease an 11 x 7-inch glass baking dish.  (I spray with Pam, but you may use butter.)
  4. Cook macaroni in large pot of boiling salted water until tender but still firm to bite. Drain well.
  5. Whisk 1/2 to ¾ cup Gruyère, cream, milk, prosciutto, Parmesan and nutmeg in large bowl to blend.
  6. Add macaroni to sauce, toss to coat.
  7. Season with a dash of salt and pepper.
  8. Transfer to prepared baking dish.
  9. Sprinkle remaining Gruyère evenly over the top.
  10. Bake until cheese melts and macaroni and cheese sets, about 20 minutes.
  11. Serve warm.
