Mac & Cheese with a French Flair

Simple Mac & Cheese recipe using Gruyere cheese.
Without much extra time or effort you can make homemade mac & cheese that knocks the socks outta the stuff from the blue box. This recipe adds a little twist by using Gruyere cheese, which can be found in the deli section of your grocery. I usually find an 8 oz package and go ahead and make my dish extra cheesy!
Ingredients:
- 8 oz. small elbow macaroni (approx. 2 cups)
- 1 ½ cup Gruyere cheese – grated or shredded (approx. 6 oz.)
- 1 cup whipping cream
- 1 cup whole milk
- 1/8 tsp nutmeg
- 3 tbsp Parmesan cheese
- Salt
- Pepper
- Optional: 3 oz. thinly sliced Prosciutto
Method:
- Position oven rack in bottom third of oven.
- Preheat to 400°F.
- Grease an 11 x 7-inch glass baking dish. (I spray with Pam, but you may use butter.)
- Cook macaroni in large pot of boiling salted water until tender but still firm to bite. Drain well.
- Whisk 1/2 to ¾ cup Gruyère, cream, milk, prosciutto, Parmesan and nutmeg in large bowl to blend.
- Add macaroni to sauce, toss to coat.
- Season with a dash of salt and pepper.
- Transfer to prepared baking dish.
- Sprinkle remaining Gruyère evenly over the top.
- Bake until cheese melts and macaroni and cheese sets, about 20 minutes.
- Serve warm.
