Making Jamaican Pizza

A clever little local recipe.

Jamaicans do like pizza as you know it. But as Jamaicans, we tend to exercise our own tastes.

This recipe is quick and easy, done in a micro wave as won’t taste exactly as pizza as you know it, but should gain its own respect.

Ingredients

Pita Bread

Olive Oil

Jerk seasoning

Tomato Sauce

Mozzarella Cheese

White Cheddar

Seasoning

Preparation

Get Pita Bread and cut them in half, keeping them in the freezer. Take one slice
when you are ready and put it on a micro safe plate.

Take a capfull of olive oil and pour it around the pita bread.

One spoon of Jerk seasoning, the mushy kind.

Two spoons of tomato sauce, smeared around with the jerk.

Very thin slices of mozzarella, not much

Very thin slices of white cheddar, more than the mozzarella but
not much, so that the pita has just a lot of small thin pieces on top

Sprinkle with green seasoning, thyme or oregano or whatever you have.

Pop into micro for 3 to 4 minutes at High

Let sit while it sizzles.

When it has stopped sizzling, cut it into slices.

The pizza will be very thin, almost cracker light, with a coating of jerk and cheese and sauce.

Jerk seasoning is very hot, so use it carefully.
