A Make Over for Left Over Pork

A COLD WEATHER SLOW COOKER MEAL.

The weather outside was frightful……as the song goes!

 It was a few days after Christmas and I needed a break from intensive cooking. Sitting in the fridge was a piece of left over roast pork and we were fed up with sandwiches.

Here’s what I made with it…preparation time 10 minutes… result  delicious!!

 

Ingredients

Left over roast pork

1 medium sized onion

1 leek

1 stalk of celery

6 small or 3 large tomatoes

1 tin of chick peas

1 tin of lentil and bacon soup

A handful of  ready chopped garlic

Salt and black pepper.

Method

·        Chop the roast pork into cubes

·        Chop all vegetables

·        Throw all the above into your slow cooker

·        Add the tin of chick peas (drained) and the soup

·        Mix well and add water to just cover ingredients

·        Set your slow cooker to auto and let it do all the work.

Serve with warm bread rolls.
