A Recipe for Chicken Cheese Balls

Are you bored of just eating plain old mashed potatoes? well here is a great recipe for chicken cheese balls,yes it does contain potatoes but it’s very tasty.

INGREDIENTS

  • 2.5kg red potatoes
  • 1 block of cheddar cheese
  • 1chicken 2lb
  • green chillies (optional)
  • salt and pepper to taste/lemon

Method

Method Wash and boil the potatoes with the skin on peel mash and keep aside,boil the chicken in salted water

once cooked make shreds ensuring there are no boned,add to potatoes grate the cheese and add followed by the seasoning add 2tsp of salt black pepper,1/2 green chillies and a squeeze of lemon juice for that extra zing.

Bind all the ingredients together ensuring that the potatoes are mashed well. Take a handful of the mixture and shape into egg shaped balls place in a tray,refridgerate for a least half an hour. Dip the cheese balls in to the egg mixture and roll in breadcrumbs then fry until golden brown. Serve with ketchup or any sauce enjoy!

Tip the chicken cheese balls are great served as a starter,always use red potatoes as they bind better,and can also be made in advance and fried the next day.
