A Simple Recipe
There are many different things we need to eat while going through cancer. We need different fruits to help give us the vitamins and nutrients to sustain our immune levels, as well as different meats for the protein and other added vitamins that chemotherapy may take away from us. It is hard to find foods that we can eat that won’t make us sick. Not to mention foods that don’t take time to prepare.
Going through chemotherapy can take so much out of us that we don’t even want to spend the time it takes to cook a meal. Here is a great recipe that gives the vitamins and nutrients we need and doesn’t take long to make, only ten minutes. It is a wonderful recipe to try and see if you enjoy and know that it will help give you things that the body needs.
Ingredients
- 1 jar orange marmalade
- ¼ cup orange juice
- ¼ cup extra vinegar olive oil (evoo)
- 1 tsp white wine vinegar
- 2 tsp salt
- 1 tsp pepper
- 6 bone in pork chops
- 3 large oranges cut into ¼ inch thick slices
- 1tsp oregano
Preparation
- Place the marmalade, orange juice, oil, vinegar, garlic, ½ teaspoon salt and ½ teaspoon pepper and oregano into a blender jar’ process until well blended.
- Now sprinkle remaining salt and pepper evenly over the chops. Place them an ½ cup of marmalade mixture in large resealable plastic bag. Seal and shake it to coat. Chill it for two hours (you can do this early in the day and then relax til time to cook) drain and discard the marinade from the bag.
- Now place the pork on the grill and cover it with the lid over medium heat for four to five minutes on each side or until no longer pink or until the juice run clear. (170 degrees for well done which while going through chemotherapy we need).
- Next you want to grill your oranges about one to two minutes on each side or until there are grill marks on the orange slices. Serve the pork chops with the remaining marmalade mixture and the grilled slices. You can place the chops on the slices for added flavor and wonderful presentation. You can place the marmalade mixture in a small bowl for dipping the pork chop pieces in.
There are always something we can eat, sometimes we just need to play trial and error with things. This recipe is great for those of us dealing with cancer because it doesn’t take long to make, and it has things we should be eating. Give it a shot and see how it works for you.
