Barbecue Recipe: Stuffed Pork Chops with Orange Spice Marmalade

Have you ever made stuffed pork chops on the grill before? We didn’t either till this summer and was pleasantly surprised and will make this a regular summer recipe to use.

This comes from Barbecue Lovers’ II from Betty Crocker

Orange spice marinade will follow pork chop recipe

4 pork loin chops 1 1/2 inches thick

1/2 cup mincemeat

1/2 cup all purpose finely chopped apples

1/3 cup finely chopped onion

Prepare orange spice marinade. Cut pocket in each pork chop on the bone side . Place pork chops in glass shallow baking dish. Pour marinade over pork. Cover dish and refrigerate at least 8 hours but no longer than 24 hours, turning pork once. Drain pork reserve marinade.

Mix the mincemeat, apple and onion in small bowl. Press about 1/4 cup mincemeat mixture into each pok chop. Secure edges with wooden pick. Grill pork 4 inches from medium coals 60 to 70 minutes brushing with marinade after 30 minutes and turn 4 or 5 times and make it positive they are THOROUGHLY COOKED. The juices should run clear.

ORANGE SPICE MARINADE

1 6 ounce can frozen orange juice concetrated , thawed

1/4 cup water

2 Tablespoons vinegar

1 Tablespoon vegetable oil

2 bay leaves

1/2 teaspoon ground allspice

1/4 teaspoon onion powder

Heat all ingredients to boiling in 1 quart saucepan over medium high heat, reduce heat, simmer 1 minute stirring constantly Cool slightly.

    Sounds wonderful. I used to eat my stuffed pork chops at a placed called Petricca’s in my town years ago and they were served with sliced orange wedges. this sounds just as grand what with the barbecued effect, off the chart good! Thanks for sharing.
