Beat Winter Chills with a Bowl of Homemade Chili

Nothing is better on a cold, windy day than a nice, hot bowl of chili to warm you up. My Mother gave me this recipe when I was younger and just starting out on my own. Enjoy!

Ingredients

  • 2 tbsp butter
  • 1 small onion
  • 1 pound lean ground beef, thawed
  • 1 ½ cups of water
  • 2 small cans tomato paste
  • 1 can dark red kidney beans, drained
  • 1 can light red kidney beans, drained
  • Chili powder or taco seasoning to taste
  • Seasoned salt to taste
  • Black pepper to taste

Method

Add butter to a large pot and allow to melt on medium heat. Chop up onion. Add onion and cook until caramelized. Remove onion from pot and add ground beef. After ground beef has browned drain fat. Add onions, water, tomato paste, and kidney beans. Stir over medium heat. Add chili powder or taco seasoning, seasoned salt, and pepper to taste. Bring to boil. Reduce heat and cover. Let simmer for 1 hour.

Options:

  1. Add grated cheese on your bowl of chili
  2. Add 8 oz box of cooked macaroni to pot of chili for chili-mac
