Beef Roast –South Indian, Anglo-Indian Style of cooking
Just to check if beef roast was cooking, there was this Angloindian family whose mother bore 11 kids cooked beef roast like nobody else in this world and it was a blessing watch her dish out the meat in true traditional Anglo-Indian style, apron on- soiled all over and hungry mouths waiting to gorge on the lip smacking roast beef just laid on the table, she snaps their finger saying you just wait for the dressing to come on – it was home made wine poured on to the bulk meat lying on the table – just waiting to be polished clean !
Main ingredients:
2 kg –Beef (Preferably from the round shoulder part)
4 to 5 dry red chilies –broken in pieces
2 tbs pepper powder
1 tbs red chilly powder
1 inch cinnamon
2 black cloves
½ cup butter
2 large potatoes – sliced in halves
1/2 cup of red wine.
Coriander leaves for garnishing
Method of preparation:
Wash the whole meat nicely and rub in the salt, red chilly powder and pepper till colour changes.
Place large vessel on oven – medium flame, throw in your butter, allow the butter to melt and then put in your red chilies, cinnamon and cloves along with salt. Wait till the smell hits the roof, add a little water and place the meat, cook till the beef turns soft and supple, add sliced potatoes and simmer on low heat till remaining water disappears from vessel, in between keep tossing up the meat till colour turns dark brown – roasted. Pour red wine and garnish with coriander leaves.
Serve this remedy either hot or cold with other steamed or boiled vegetables of your choice.
