Beef Stock

This is a very flavorful stock, that could be used in soups,stews and sautee dishes.
Ingredients
- 8-10 pounds of raw beef bones and trimmings
- 2 peeled onions cut in four
- 2 whole carrots
- 2 celery stalks
- 2 leeks cut up
- 2 parsnips cut in four
- 4 peeled garlic cloves
- 1 teaspoon black peppercorns
- 1 bay leaf
- 1 bunch parsley
Method
Place all ingredients in a pot and cover ingredients by at least one inch. Bring to a boil skimming off the foam. Reduce heat , leave to simmer for three and a half hours ! Leave to cool for about ten minutes , then strain.
