Beef Stock

This is a very flavorful stock, that could be used in soups,stews and sautee dishes.

 Ingredients  

  • 8-10 pounds of raw beef bones and trimmings
  • 2 peeled onions cut in four
  • 2 whole carrots
  • 2 celery stalks
  • 2 leeks cut up
  • 2 parsnips cut in four
  • 4 peeled garlic cloves
  • 1 teaspoon black peppercorns
  • 1 bay leaf
  • 1 bunch parsley

Method

Place all ingredients in a pot and cover ingredients by at least one inch. Bring to a boil skimming off the foam. Reduce heat , leave to simmer for   three and a half hours !   Leave to cool for about ten minutes , then strain.
