Cajun Pork Meatballs

A fast and easy to make Cajun twist to a lazy; yet nutritious, midweek meal to spice up your life.
Cajun Pork Meatballs Ingredients:
- 500g Lean Pork Mince
- 1 Onion
- Dried Fine White Breadcrumbs
- ½ of Green Bell Pepper
- 1 Tablespoon of Chopped Fresh Mint
- ½ Tablespoon of Olive Oil
- 2 Teaspoons of Cajun Spice Blend
- Freshly Ground Black Pepper (for seasoning)
- Freshly Ground Sea Salt (for seasoning)

Method:
- Rinse, peel and then chop the onion, the green bell pepper and the fresh mint
- Preheat oven to 2200C
- Using a frying pan or wok add the olive oil, the chopped onion and the chopped green bell pepper and stir-fry for 5 minutes
- Now add the pork mince, the Cajun spice blend, the chopped mint and season to taste with freshly ground black pepper and some freshly ground sea salt and stir-fry for a minute or so
- Then remove from heat and mix well
- Roll mixture into walnut-sized balls
- Toss meatballs in fine white breadcrumbs ensuring that you coat them evenly and then arrange the coated meatballs onto a baking tray
- Place loaded baking tray into preheated oven and bake at 2200C for 15 minutes or until golden brown
- Serve when ready
Tip: If you are serving with oven-baked potato wedges then put the wedges on the top oven shelf before starting to roll the meatballs as this will ensure that the potato wedges will be ready by the time the meatballs are cooked to perfection.
Serving: Serves 4
- Serve with a fresh tomato and onion salsa and pasta or oven-baked potato wedges and some garlic bread
- Alternatively serve with some steamed vegetables and boiled new potatoes topped with a dollop of sour cream
- Potatoes baked in their jackets topped with sour cream and finely chopped parsley or a custom potato topping such as a creamy curried cauliflower topping also works well
- You can of course spread a bed of spaghetti or steamed rice on a serving plate, then add some Cajun pork meatballs and top with an all purpose tomato-based pasta sauce, a sprinkling of chopped parsley and servings of toasted crispy garlic bread and do enjoy!
