Cajun Rice & Pork Chop

Cajun Rice

SERVES: 4 to 5
PREP TIME: 10 minutes
COOK TIME: 5 minutes
Ingredients
- 2 tablespoons vegetable oil
- ½ cup salted butter
- 3 shallots butter
- 4 cloves garlic, minced
- 1 tablespoon salt
- ½ teaspoon pepper
- 1 tablespoon Cajun powder
- ½ cup tomato, seeded and chopped
- ½ cup chopped red bell pepper
- 5 cups cooked rice
Method
- Heat vegetable oil in work. Add butter and shallots. Stir for 2 minutes
- Add garlic, salt, pepper, and Cajun powder. Then add tomato and bell pepper. Stir for 1 minute.
- Add cooked rice. Mix till evenly coated. Serve hot.
Oh-So-Tender Chops

This brine is good for two kilos of pork chops
Ingredients
- 16 cups water
- ½ cup rock salt
- ½ cup sugar
- ½ cup cracked peppercorns
- 2 laurel leaves
Method
- Let brine boil and cool. Put chops in the solution and keep overnight or 24 hours in the fridge.
- Drain pork chops.
- Marinate for 3 hours in 4 clover garlic, herbs of choice, liquid seasoning, and oil.
- Fry or grill as desired.
