Cajun Rice & Pork Chop

Sizzling good.

Cajun Rice

SERVES: 4 to 5

PREP TIME: 10 minutes

COOK TIME: 5 minutes

Ingredients

  • 2 tablespoons vegetable oil
  • ½ cup salted butter
  • 3 shallots butter
  • 4 cloves garlic, minced
  • 1 tablespoon salt
  • ½ teaspoon pepper
  • 1 tablespoon Cajun powder
  • ½ cup tomato, seeded and chopped
  • ½ cup chopped red bell pepper
  • 5 cups cooked rice

Method

  1. Heat vegetable oil in work. Add butter and shallots. Stir for 2 minutes
  2. Add garlic, salt, pepper, and Cajun powder. Then add tomato and bell pepper. Stir for 1 minute.
  3. Add cooked rice. Mix till evenly coated. Serve hot.

Oh-So-Tender Chops

This brine is good for two kilos of pork chops

Ingredients

  • 16 cups water
  • ½ cup rock salt
  • ½ cup sugar
  • ½ cup cracked peppercorns
  • 2 laurel leaves

Method

  1. Let brine boil and cool. Put chops in the solution and keep overnight or 24 hours in the fridge.
  2. Drain pork chops.
  3. Marinate for 3 hours in 4 clover garlic, herbs of choice, liquid seasoning, and oil.
  4. Fry or grill as desired.
